I am disappointed that game makers havent tried new modes of User Interface like gaze following, player motion tracking, speech recognition etc.

I don't think it would bring a whole lot of 'new' to console gaming. Nintendo tried it with the Wii and even though statistics say otherwise, I think it's a total flop. The Wii is interesting for two days and then it gets boring very quickly. I think it's the same with any other of these would be features. Interesting side things, but nothing worth building a game on/around.
